Balsamic Vinegar from Modena (Aceto Balsamico di Modena) Feature

  • Specially crafted balsamic, made in the traditional style , with eight-year aged vinegar
This authentic Italian balsamic vinegar is bottled exclusively by A.G. Ferrari Foods. The producer who makes this vinegar for us in Modena was recommended to Paul Ferrari by our artisanal producers. The vinegar, which uses the must of local grapes, is barrel aged in the traditional Italian style and then blended with eight-year aged vinegar to give it a sweet, full flavor. Its sweet-tart flavor makes it perfect for vinaigrettes and marinades. We believe this is the best balsamic vinegar available in its price range. No added sweeteners or preservatives.

50 Yr Aged Balsamic Vinegar 3.4 Oz

50 Yr Aged Balsamic Vinegar 3.4 Oz Reviews

Other Picture

50 Yr Aged Balsamic Vinegar 3.4 Oz Feature

  • 3.4 oz bottle of 50 yr balsamic vinegar
  • Sweet and sour flavor
  • Dark in color
  • Thick syrup consistency
Balsamic begins with just-picked Lambrusco and Trebbiano grapes. They are cooked to a temperature no higher than 194 degrees -- to release their juices but not to cook away any of the flavor. The juice is cooled, filtered, then stored in barrels filled no more than 3/4's full. Many different types of wood, mostly castagno but also ginepro (juniper) and ciliegia (cherry) are used to make special reserve vinegars. As the vinegar ages and evaporates over years it is transferred from the large 'mother' barrel to smaller ones. The taste of vinegar that's 50 years old is a rare treat.

Cavalli Condiment Balsamic Vinegar, 8.4-Ounce

Cavalli Condiment Balsamic Vinegar, 8.4-Ounce Reviews

Other Picture

Cavalli Condiment Balsamic Vinegar, 8.4-Ounce Feature

  • One of the finest Balsamicos available
  • Product produced with cooked grape must of Trebbiano and Lambruschi
  • Acetification process occurs in aged barrels of oak, chestnut, mulberry and juniper
  • No thickerners, coros or flavorings are added
  • The Cavalli Brothers are the oldest producers of Balsamico in Reggio Emilia
Cavalli Balsamico Condeminto adds perfectly balanced sweet/sour flavor to salads, sauces, vegetables, fruits (try it with melon or strawberry!), roasts and game. Cavalli Balsamic Condiment is made from 50% Trebbiano must (Balsamico is made from 100% must), and 50% aged wine vinegar. The Cavalli's age their 'condimento' in wood barrels for at least three years before it is ready to be bottled and shipped. If you're looking for something delicious for your everyday use, this is it. It's great on salads, in marinades, sprinkled onto spring lamb, drizzled onto fresh berries. A word about Cavalli Balsamico Vinegar Work: The Cavalli Vinegar Works, or "acetaia", is located in the tiny town of Scandiano, about twenty minutes outside of Modena, just west of the autostrada that connects Bologna with Milan. The Cavalli brothers inherited the acetaia from their father, Dottore Fernando Cavalli, who passed away in 1998. The Dottore began to make Balsamic vinegar after over fifty years of work as a winemaker. While making his own vinegars, Dottore Cavalli also purchased barrels filled with very old vinegars from what the brothers refer to somewhat mysteriously, as an "aristocratic family." These aged vinegars gave the brothers the base they needed to make their vinegars into something special. The Cavalli acetaia has got to be a cooper's idea of heaven - everywhere you turn, there are barrels: barrels made from oak, cherry, mulberry, chestnut, and juniper. There are new barrels, old barrels, barrels built before the turn of the century, barrels six feet across all the way down to tiny little things no more than a foot high. And they're everywhere! There are barrels in the attic, on the main floor, even in the stairways. Barrels and flies-flies buzzing around the mouth of every barrel are the 'mosca', the tiny, mosquito sized "vinegar flies" which are found in every acetaia. The opening to each barrel is covered with a small screen cloth allowing the vinegar to breathe.
