This Balsamic vinegar bears no resemblance whatsoever to the versions found in supermarkets, often colored with caramel and without the incredible richness of the real thing. To obtain this vinegar, in Modena, the grape must of the Trebbiano grapes are cooked and then aged in oak casks, either a few months or up to several years. Origins: the liquor (for this is really what it is) that comes out of these casks are at the origin of the appellation of the vinegar, and the name is a protected AOC. Bottled in Italy. Use in cooking: this syrup is a luxury. You need only a few drops on Parma Ham, on a tomato and mozzarella salat, on vanilla ice cream or on fresh garden strawberries.

It has a robust taste, a smooth sweet and sour balance and should be used directly on the food to be eaten. We also recommend it for barbequeing meats, and in risotto and stews. This balsamic vinegar of Modena is the result of one traditional craftsmanship. For three generations, the DeNigris family has been producing this vinegar which is made from the cooked must of grapes and aged naturally. The long production process inludes the transfer of the vinegar from barrel to barrel which imparts the characteristic sweet sour flavor, dark brunette color and full body.This superior stock, aged 12 years, will grace any table with distinction . Balsamic Vinegar begins with the crushing of sun-ripened grapes. This grape juice is concentrated through simmering in copper caldrons over wood fires until it is reduced to about 40% of its original weight. This densely concentrated liquid is placed in wooden barrels of oak, cherry, mulberry, chestnut and juniper for aging. As the years go by some of the liquid in the barrel evaporates and some is absorbed into the wood. Each year the vinegar is transferred into smaller barrels of different woods. This processing and the master Vinegar maker's hands-on experience gives Balsamic Vinegar the delicate flavor of the woods and the sweetness of the sunripened grapes.

In July 2009 Aceto Balsamico di Modena (Balsamic Vinegar of Modena) obtained the Protected Geographical Indication status from the European Union. This status is established to protect the producers of certain products as well as to protect the consumer from imitations. Obtaining the PGI status brings with it the obligation to adhere to certain rules some of which pertain to labeling. Therefore, you will find that some of your favorite products now have redesigned labels that may initially cause some confusion.

The PGI law does not allow numbers, years, or descriptive adjectives such as Gran Riserva, Riserva, Selezione, and Speciale tobe printed on the labels. Only the word "Invecchiato" (aged) may appear on the label as long as the product is aged for a period of at least three years in casks, barrels or other wooden receptacles. As a result, most labels have been redesigned with the colors Gold, Silver, and Bronze to distinguish the different qualities.

This precious balsamic vinegar arises from Lodovico Campari's passion for Modena and its origins. Trebbiano grapes are picked at their peak ripeness and the must that is obtained is then left to ferment in open top vessels. Once the cooked must has reduced by two thirds, it is then put in oak barrels where it stands in the dark of the "attics".

From one year to another, Lodovico Campari's Balsamic Vinegar is transferred from one wood barrel to another, drawing distinctive and unmistakable aromas from each different kind of wood, from cherry to juniper.
