The Titone "Valli Trapanesi" is an organic extra virgin olive oil from the area near Trapani, on the Western side of Sicily. This area is a D.O.P. designated area. The oil has the taste and aroma typical of the Valli Trapanesi oils. Crafted from nocellara, biancolilla, and cerasuola olives.

A tasting opens with a delicious, fruity smell, then a more complex vegetable flavor develops, concluding with a light, bitter, peppery aftertaste. Wonderful!

Manicardi Balsamic Vinegar #12 comes to us from the Manicardi farm in Castelvetro.

The Balsamic Vinegar of Modena has a precious and intense flavor thanks to its natural ingredients. The natural flavor of Balsamic Vinegar is obtained during the time inside casks of different woods like cherry and chestnut. Through the time in the wood, each wood's unique flavor infuses the vinegar. The result is an intense essence that enhances the flavors of foods, both simple and complex. The Balsamic Vinegar of the Acetaia "12" is recommended for salads, steamed vegetables, omelets, and roasted meats. For a special treat, dip slices of Parmigiano-Reggiano in this aged DOC-protected balsamic.

True balsamic vinegar is aged a minimum of six years and is traditionally made in Modena, a city in the Emilia-Romagna region of Italy. Manicardi's assortment of balsamic vinegars includes many different quality levels, which are denoted by a number, reflecting increasing aging and quality. Cavalli Balsamico Condeminto adds perfectly balanced sweet/sour flavor to salads, sauces, vegetables, fruits (try it with melon or strawberry!), roasts and game. Cavalli Balsamic Condiment is made from 50% Trebbiano must (Balsamico is made from 100% must), and 50% aged wine vinegar. The Cavalli's age their 'condimento' in wood barrels for at least three years before it is ready to be bottled and shipped. If you're looking for something delicious for your everyday use, this is it. It's great on salads, in marinades, sprinkled onto spring lamb, drizzled onto fresh berries. A word about Cavalli Balsamico Vinegar Work: The Cavalli Vinegar Works, or "acetaia", is located in the tiny town of Scandiano, about twenty minutes outside of Modena, just west of the autostrada that connects Bologna with Milan. The Cavalli brothers inherited the acetaia from their father, Dottore Fernando Cavalli, who passed away in 1998. The Dottore began to make Balsamic vinegar after over fifty years of work as a winemaker. While making his own vinegars, Dottore Cavalli also purchased barrels filled with very old vinegars from what the brothers refer to somewhat mysteriously, as an "aristocratic family." These aged vinegars gave the brothers the base they needed to make their vinegars into something special. The Cavalli acetaia has got to be a cooper's idea of heaven - everywhere you turn, there are barrels: barrels made from oak, cherry, mulberry, chestnut, and juniper. There are new barrels, old barrels, barrels built before the turn of the century, barrels six feet across all the way down to tiny little things no more than a foot high. And they're everywhere! There are barrels in the attic, on the main floor, even in the stairways. Barrels and flies-flies buzzing around the mouth of every barrel are the 'mosca', the tiny, mosquito sized "vinegar flies" which are found in every acetaia. The opening to each barrel is covered with a small screen cloth allowing the vinegar to breathe.

100 ml - Red Seal Balsamic What Gourmet Magazine says in the January issue, 2007: "Although it's relatively young, Antica Acetaia San Giacomo's 12-year old balsamic vinegar has a complex taste and a thick, syrupy texture that trump older vintages we've tried." What We Say: Even though the company is young, the Acetaia of Ancient San Giacomo in Reggio-Emilia was old with barrels of the black gold already in excess of 50 years when it began its commercial life a few years ago. About San Giacomo: Papa Carl Bezzecchi had begun producing balsamic condimento in the early 60s with three batteries, and he eventually had to expand to satisfy the increasing demand of knowing friends. The acetaia was moved in the 80s to accommodate the need for this growing capacity. In the mid 90s the work of maintaining the acetaia and producing its noble liquid was taken over by son Andrea son, a lawyer by trade, including another barrel-by-barrel move to the attic of his own, modern house. It wasn't until the late 90s that Andrea was convinced to use his precious patrimony to produce Balsamic Tradizionale. The long years of work, a true labor of love, for Andrea was rewarded by three certifications, Red for 12 years of aging, Silver for 18 years aging and Gold for 25 years of aging. This is a true cottage industry with extremely limited production.
