In the rich, alluvial soil of Lambrusco di Sorbara in Soliera Italy, just outside of Modena in the Emilia Romagna region, the Maletti family has been producing quality traditional balsamic vinegar (aceto balsamico tradizionale) for generations. The Maletti's produce their balsamic vinegar from the wine and grape must (unfermented, pressed grape juice and pulp before it's turned into wine) of selected Lambrusco (red) and Trebbiano (white) grape varietals. Their vinegar is aged in an accelerated yet regulated evaporation process in former wine barrels of French Allier oak. Maletti balsamic vinegar is superb on a wide range of dishes, from fresh strawberries to salad greens topped with Parmigiano Reggiano shavings to most any meat dish. "Due Vittorie" Label. Michele and Mariangela Montanari are a young couple in their twenties, who have devoted their passion and hard work in producing their Traditional Balsamic Vinegar of Modena to the memory of their great-grandfather Alfonso (hence the name, "Ca' del Non", which in the local dialect means "Home of Grandpa"). They rebuilt and renovated the old family vinegar house (the "acetaia"; you can see it in the picture) in Vignola (the home of those big and crunchy cherries!) and today carry on the production of this traditional balsamic vinegar, with the help of their friend Paolo Bortolotti. Ca' del Non handles every aspect of production, from the processing of the must obtained from its own Trebbiano white grapes, to the bottling and packaging, which, in compliance with the law, is entrusted to the Consortium of Producers of the Traditional Balsamic Vinegar of Modena. The magnificent results can be seen by sliding a few drops down the back of a spoon: the vinegar has a brilliant dark brown color, an amazing syrupy consistency, and an exhilarating and luscious taste and aroma. Use it as much as you can; it goes well with every kind of food. Our favorite way to savor it is by the teaspoonful, pure and straight.

Italo Pedroni's great-great-grandfather opened Osteria di Rubbiara restaurant in Nonantola (outside of Modena) in 1862. Following in his footsteps, Italo, his wife Franca, and their son Giuseppe continue to run this well respected restaurant, as well as an acetaia, where the family makes some of Modena's best balsamic vinegars. Using traditional techniques, Italo and Giuseppe carefully age their award-winning balsamics in wooden barrels. The Consorzio Produttori di Aceto Balsamico Tradizionale di Modena (the governing body that oversees the production of and sets the quality standards by which all traditional balsamics are measured) holds its balsamic tastings at Italo's restaurant.

Giuseppe Pedroni blends young-and-old (up to 100 years old!) balsamic vinegars among different types of wood barrels for dense, concentrated notes of berries, grapes and vanilla.
