Michele and Mariangela Montanari are a young couple in their twenties, who have devoted their passion and hard work in producing their Traditional Balsamic Vinegar of Modena to the memory of their great-grandfather Alfonso (hence the name, "Ca' del Non", which in the local dialect means "Home of Grandpa"). They rebuilt and renovated the old family vinegar house (the "acetaia"; you can see it in the picture) in Vignola (the home of those big and crunchy cherries!) and today carry on the production of this traditional balsamic vinegar, with the help of their friend Paolo Bortolotti. Ca' del Non handles every aspect of production, from the processing of the must obtained from its own Trebbiano white grapes, to the bottling and packaging, which, in compliance with the law, is entrusted to the Consortium of Producers of the Traditional Balsamic Vinegar of Modena. The magnificent results can be seen by sliding a few drops down the back of a spoon: the vinegar has a brilliant dark brown color, an amazing syrupy consistency, and an exhilarating and luscious taste and aroma. Use it as much as you can; it goes well with every kind of food. Our favorite way to savor it is by the teaspoonful, pure and straight.
